All types of cheese are produced of full fat, pasteurised, non-homogenised milk from the Istrian pasture lands.
Although recently enriched with a taste of truffles, our cheeses boast with the taste of milk, the taste reminiscent of childhood, the taste of cheese from “wheat”, the taste of the grandma’s kiss …
Our first semi-hard cheese, the one that has a “slate loose”, as we like to joke (vacuum aging one instead of aging on planks), with no rind, which owing to its process of aging is perfect to be melted in the toast, spread over pasta or make pizza irresistible.
Cheese made of full fat cow’s milk aging on fir planks, characterised by the golden rind of mild taste gently blending with a slice of the Istrian prosciutto, a sip of white wine.
It is our cheese for everyday consumption and for “every toiler”.

Our latest and at the same time our oldest cheese!
The last in our range of ripe cheeses, which at one moment in time had completely been put aside in order to make a miraculous comeback and make our mouth water after resting on planks for almost a year, the same mouth of those who recognised it, the mouth of experts who voted it the best in 2015.
It goes through a long aging process, up to one year during which it soaks up different aromas, develops fragrances …
Weighing more than 7 kg, under the rind acquiring a soft shade of autumn brown, is hidden the taste of… cheese! There is no big secret, that’s how the cheese must smell, melt in mouth, fill all senses and let one’s imagination flow.
It smells like spring to somebody and puts a seductive smile on someone else’s face …
"Latufino" cheese with Truffles
Truffle aromas imprisoned in vacuum and released only after eating the somehow extraordinary blend of semi hard cow’s cheese and thinly cut “slices” of the Istrian truffle.

As this is the case with our cheeses all our products are made of high quality, pasteurised, non-homogenised milk with no addition of artificial aromas, colours and preservatives.

Made of milk. Without stabiliser, emulsifier, cream… made of milk. Refreshing – hard yogurts; Softer, creamy – liquid yogurt.
